We’re looking for a skilled, reliable Butcher to join our busy kitchen team in Cape Town. You’ll play a key role in receiving, preparing, and maintaining the highest standards for all meat and seafood used across our menus. If you have strong knife skills, a solid understanding of cuts and preparation, and thrive in a fast-paced hospitality environment, we want to hear from you.

 

Key responsibilities

 

Receive and inspect incoming meat and seafood deliveries, confirming quality, temperature, and documentation.

 

Break down whole carcasses and larger primal cuts into precise portions and customer-ready cuts according to recipe and service requirements.

 

Prepare seafood, poultry, red meat, and specialty cuts with consistent technique, presentation, and yield control.

 

Trim, portion, debone, grind, tie, and portion products to spec, ensuring minimal waste and maximum quality.

 

Maintain proper storage and rotation (FIFO) to preserve freshness and comply with temperature-control standards.

 

Label and date products accurately, monitor stock levels, and alert kitchen management when reordering or inventory adjustments are required.

 

Keep the butcher station and cold rooms clean and sanitized; follow all food safety, HACCP, and sanitation protocols.

 

Collaborate with chefs and kitchen staff on menu planning, portioning for specials, and recipe development ideas that optimize cost and flavor.

 

Assist with training junior kitchen staff on butchery techniques, safe use of tools and machinery (slicers, grinders, bandsaws), and proper handling procedures.

 

Adhere to company policies regarding safety, personal hygiene, and team conduct and participate in routine equipment maintenance checks.

 

What we’re looking for

 

Proven experience as a Butcher in a high-volume kitchen, restaurant, or retail butcher shop.

 

Strong knowledge of primal and sub-primal cuts, portioning, deboning, trussing, and seafood preparation techniques.

 

Familiarity with food safety standards, HACCP principles, and local health regulations.

 

Excellent knife skills, attention to detail, and an ability to produce consistent, high-quality cuts.

 

Physical stamina and the ability to safely lift and move heavy boxes and product (manual handling experience preferred).

 

Strong communication and teamwork skills; able to work calmly under pressure during service rushes.

 

Flexible availability, including weekends, evenings, and public holidays as required by operational needs.

 

Culinary qualification, butchery certification, or formal training is a plus.
